- 1 cup quinoa
- 1/2 teaspoon sea salt
- 1/2 tablespoon olive oil
- 1 cup cooked black beans
- 1 avocado, diced
- 1/4 cup diced red onion
- Rinse the quinoa in a fine mesh sieve.
- Combine the quinoa, salt and 1 cup water in a medium saucepan.
- Bring to a boil over high heat and reduce to low heat.
- Cover and simmer for 15 minutes.
- Fluff with a fork and stir in olive oil.
- Stir in black beans, avocado, and red onion.
- Serve warm or cold.
