Ingredients
  • 1 cup quinoa
  • 1/2 teaspoon sea salt
  • 1/2 tablespoon olive oil
  • 1 cup cooked black beans
  • 1 avocado, diced
  • 1/4 cup diced red onion

Steps
  1. Rinse the quinoa in a fine mesh sieve.
  2. Combine the quinoa, salt and 1 cup water in a medium saucepan.
  3. Bring to a boil over high heat and reduce to low heat.
  4. Cover and simmer for 15 minutes.
  5. Fluff with a fork and stir in olive oil.
  6. Stir in black beans, avocado, and red onion.
  7. Serve warm or cold.
