Ingredients
  • 1 cup quinoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1 1/2 cups water
  • 2 tablespoons olive oil
  • 1/4 cup diced onion
  • 1 garlic clove, minced
  • 1 can chickpeas, drained and rinsed
  • 1 avocado, diced

Steps
  1. In a medium saucepan, combine quinoa, salt, cumin and chili powder. Add water and bring to a boil. Reduce heat to low and simmer for 15 minutes or until all the water is absorbed.
  2. In a large skillet over medium heat, heat olive oil. Add onion and garlic and cook for 2 minutes or until onion is softened.
  3. Add chickpeas and cook for 5 minutes or until heated through.
  4. Remove from heat and add avocado.
  5. Serve quinoa in bowls topped with chickpea-avocado mixture.
