Ingredients
  • 1 cup quinoa
  • 3/4 cup vegetable broth
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon olive oil

Steps
  1. In a medium pot, bring quinoa and vegetable broth to a boil. Reduce heat to low and simmer for 15 minutes.
  2. Meanwhile, in a large skillet heat oil over medium heat. Add bell pepper, onion and garlic and cook until tender.
  3. Combine cooked quinoa and cooked vegetables in a bowl.
  4. Serve warm.
