- 1 cup quinoa
- 3/4 cup vegetable broth
- 1 bell pepper, diced
- 1/2 onion, diced
- 1 garlic clove, minced
- 1 teaspoon olive oil
- In a medium pot, bring quinoa and vegetable broth to a boil. Reduce heat to low and simmer for 15 minutes.
- Meanwhile, in a large skillet heat oil over medium heat. Add bell pepper, onion and garlic and cook until tender.
- Combine cooked quinoa and cooked vegetables in a bowl.
- Serve warm.
