  • 1 cup quinoa
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup diced cucumber
  • 1/4 cup diced tomato
  • 1/4 cup feta cheese (optional)
  • 2 tablespoons olive oil

  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, onion, bell pepper, cucumber, tomato and feta cheese (if using).
  3. Drizzle with olive oil and toss to combine.
  4. Serve warm or cold.
