- 1 cup quinoa
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup diced cucumber
- 1/4 cup diced tomato
- 1/4 cup feta cheese (optional)
- 2 tablespoons olive oil
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, onion, bell pepper, cucumber, tomato and feta cheese (if using).
- Drizzle with olive oil and toss to combine.
- Serve warm or cold.
