Ingredients
1 cup quinoa
1 can black beans, drained and rinsed
1 red bell pepper, diced
1/2 red onion, diced
2 cloves garlic, minced
1/4 teaspoon cumin
1/4 teaspoon chili powder
Salt and pepper to taste

Steps
Cook quinoa according to package instructions.
In a medium saucepan over medium heat, add the black beans, bell pepper, onion, garlic and spices. Cook for about 5 minutes or until vegetables are softened.
Add the cooked quinoa to the pan and mix everything together.
Serve warm or chilled.
