Quinoa Black Bean…
Ingredients
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste

Steps
  1. Cook quinoa according to package instructions.
  2. In a medium saucepan over medium heat, add the black beans, bell pepper, onion, garlic and spices. Cook for about 5 minutes or until vegetables are softened.
  3. Add the cooked quinoa to the pan and mix everything together.
  4. Serve warm or chilled.
