- 1 cup quinoa
- 2 cups vegetable broth
- 1/2 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced yellow bell pepper
- 1/4 cup diced green bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Bring vegetable broth to a boil in a medium saucepan. Add quinoa and stir.
- Reduce heat to low and cover. Simmer for 15 minutes.
- Add onion, bell peppers, garlic powder, oregano, salt and pepper. Stir.
- Cover and simmer for an additional 15 minutes or until all the liquid is absorbed.
- Remove from heat and fluff with a fork.
- Serve warm.
