Quinoa & Veggies
Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/2 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow bell pepper
  • 1/4 cup diced green bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Steps
  1. Bring vegetable broth to a boil in a medium saucepan. Add quinoa and stir.
  2. Reduce heat to low and cover. Simmer for 15 minutes.
  3. Add onion, bell peppers, garlic powder, oregano, salt and pepper. Stir.
  4. Cover and simmer for an additional 15 minutes or until all the liquid is absorbed.
  5. Remove from heat and fluff with a fork.
  6. Serve warm.
