Pumpkin Spice Cup…
Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 2 cups white sugar
  • 3 eggs, room temperature recommended
  • 1 (15 ounce) can pumpkin puree

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Line muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt.
  3. In a large bowl with an electric mixer on medium speed, beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. Mix in the pumpkin puree.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Divide batter evenly between cupcake liners. Fill each liner about 2/3 full.
  7. Bake for 20-25 minutes or until an inserted toothpick comes out clean.
  8. Allow cupcakes to cool before frosting.
