Pumpkin Pie Bars
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1 1/4 cups packed brown sugar
  • 2 eggs
  • 1 can (15 ounces) pumpkin puree

Steps
  1. Preheat oven to 350°. In a large bowl, combine the first five ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in brown sugar. Add eggs and pumpkin; mix well.
  2. Press into an ungreased 15x10x1-in. baking pan. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
  3. For frosting, in a small bowl, beat cream cheese and butter until fluffy. Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Spread over bars.
  4. Sprinkle with pecans if desired
