Pumpkin Pancakes
Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 egg, beaten
  • 3/4 cup milk
  • 2 tablespoons vegetable oil
  • 3/4 cup canned pumpkin

Steps
  1. In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon and nutmeg. In a separate bowl, whisk together the egg, milk and oil. Stir the wet ingredients into the dry ingredients just until blended. Gently fold in the pumpkin.
  2. Heat a lightly greased griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
  3. Makes about 8 pancakes.
