In a large bowl, mix together the flour, sugar, baking powder, salt, cinnamon and nutmeg. In a separate bowl, whisk together the egg, milk and oil. Stir the wet ingredients into the dry ingredients just until blended. Gently fold in the pumpkin.
Heat a lightly greased griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
