Pumpkin Muffins
Ingredients
  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with muffin liners.
  2. In a large bowl, mix together the oil, sugar and vanilla. Beat in the eggs one at a time, then stir in the pumpkin.
  3. Combine the flour, baking powder, baking soda, salt and cinnamon; stir into the pumpkin mixture.
  4. Fill muffin cups two-thirds full with batter. Bake for 20 to 25 minutes in preheated oven. Muffins are done when toothpick inserted in center comes out clean.
  5. Cool before serving.
