Pumpkin Bread
Ingredients
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 3 cups white sugar
  • 1 cup vegetable oil
  • 4 eggs, beaten
  • 2/3 cup water
  • 2 cups canned pumpkin

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
  2. In a large bowl, mix together the flour, baking soda, cinnamon, nutmeg, salt and sugar.
  3. In a separate bowl, combine the oil, eggs and water. Mix in the canned pumpkin.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide batter between prepared pans.
  6. Bake for 60 minutes or until a toothpick inserted into center of loaves comes out clean.
  7. Allow to cool in pans for 10 minutes before removing to cool completely on wire racks.
