- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon salt
- 3 cups white sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 2/3 cup water
- 2 cups canned pumpkin
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
- In a large bowl, mix together the flour, baking soda, cinnamon, nutmeg, salt and sugar.
- In a separate bowl, combine the oil, eggs and water. Mix in the canned pumpkin.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Divide batter between prepared pans.
- Bake for 60 minutes or until a toothpick inserted into center of loaves comes out clean.
- Allow to cool in pans for 10 minutes before removing to cool completely on wire racks.
