Ingredients
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3 large eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil or melted butter (or a combination of both)
  • 2 teaspoons vanilla extract
  • 15 ounces canned pumpkin puree (not pumpkin pie filling)

Steps
  1. Preheat oven to 350°F (177°C). Grease and flour two 9x5-inch loaf pans.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger and salt.
  3. In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the eggs and sugar together until combined.
  4. Add the oil and vanilla extract and beat until combined. Add in the pumpkin puree and mix until combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  6. Divide batter evenly between two prepared loaf pans. Bake for 50-60 minutes or until an inserted toothpick comes out clean.
  7. Let bread cool before serving.
