Potato Soup
Ingredients
  • 4 large potatoes, peeled and cubed
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 3 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons all-purpose flour
  • 2 cups milk

Steps
  1. In a large saucepan, melt butter over medium heat. Add onion and cook until tender. Stir in potatoes, broth, salt and pepper. Bring to a boil; reduce heat and simmer for 15 minutes or until potatoes are tender.
  2. In a small bowl, combine flour and milk until smooth; stir into soup. Cook and stir for 2 minutes or until thickened.
  3. Serve hot.
