- 4 large potatoes
- 1/2 cup mayonnaise
- 1/4 cup diced onion
- 2 tablespoons white vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- Peel and cube potatoes.
- Boil in salted water until tender.
- Drain and cool.
- In a large bowl, combine mayonnaise, onion, vinegar, sugar, salt and pepper.
- Add potatoes and mix until evenly coated.
- Refrigerate for at least 1 hour before serving.
