- 2 cups grated potatoes
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons butter, melted
- In a bowl, combine the potatoes, flour, baking powder, salt and pepper.
- Stir in the melted butter.
- Heat a large nonstick skillet over medium heat.
- Drop about 1 tablespoon of the potato mixture for each pancake into the hot skillet.
- Cook for 2 minutes on each side or until golden brown and cooked through.
- Serve with sour cream or applesauce.
