Potato Pancakes
Ingredients
  • 2 cups grated potatoes
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons butter, melted

Steps
  1. In a bowl, combine the potatoes, flour, baking powder, salt and pepper.
  2. Stir in the melted butter.
  3. Heat a large nonstick skillet over medium heat.
  4. Drop about 1 tablespoon of the potato mixture for each pancake into the hot skillet.
  5. Cook for 2 minutes on each side or until golden brown and cooked through.
  6. Serve with sour cream or applesauce.
