Potato Latkes
Ingredients
  • 2 russet potatoes
  • 1 onion
  • 2 eggs
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil for frying

Steps
  1. Grate potatoes and onion into a large bowl.
  2. Beat the eggs in a separate bowl.
  3. Mix the eggs, flour, salt and pepper with the potatoes and onion.
  4. Heat oil in a large skillet over medium heat.
  5. Form patties of the potato mixture with your hands.
  6. Fry for about 4 minutes on each side until golden brown.
  7. Serve hot with applesauce or sour cream.
