- 4 slices bacon, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 3 potatoes, peeled and diced
- 3 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon pepper
- 2 cups half-and-half cream
- In a large pot over medium heat, cook bacon until crisp. Remove bacon from pot and set aside. Add onion and garlic to the pot and cook until softened.
- Add potatoes, chicken broth, thyme, oregano, and pepper. Bring to a boil; reduce heat to low and simmer for 15 minutes.
- Stir in cream and cooked bacon. Simmer for 10 minutes or until potatoes are tender.
