- 2 large plantains
- 1/4 cup oil, divided
- Peel the plantains and cut into small pieces.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat.
- Add the plantain pieces and cook for about 5 minutes, stirring occasionally.
- Reduce the heat to low and continue cooking for another 5 minutes, or until the plantains are golden and soft.
- Transfer the cooked plantains to a food processor and process until smooth.
- Add 1 tablespoon of oil to the skillet, then scoop 1/4 cup of the plantain mixture into the center of the skillet.
- Using a spatula, spread out the mixture into a thin circle (about 6 inches in diameter).
- Cook for about 3 minutes on each side, or until golden brown. Repeat with remaining plantain mixture.
