- 2 ripe plantains
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter, melted
- Peel and mash the plantains in a bowl.
- In a separate bowl, mix together the flour, baking powder, salt and cinnamon.
- Add the mashed plantains to the dry ingredients and stir until combined.
- Stir in the melted butter until fully incorporated.
- Heat a skillet over medium heat and add enough vegetable oil to coat the bottom of the pan.
- Drop heaping tablespoons of batter into the hot oil and cook for 2-3 minutes on each side or until golden brown.
- Drain on paper towels and serve warm.
