Plantain Fritters
Ingredients
  • 2 ripe plantains
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter, melted

Steps
  1. Peel and mash the plantains in a bowl.
  2. In a separate bowl, mix together the flour, baking powder, salt and cinnamon.
  3. Add the mashed plantains to the dry ingredients and stir until combined.
  4. Stir in the melted butter until fully incorporated.
  5. Heat a skillet over medium heat and add enough vegetable oil to coat the bottom of the pan.
  6. Drop heaping tablespoons of batter into the hot oil and cook for 2-3 minutes on each side or until golden brown.
  7. Drain on paper towels and serve warm.
