- 1/2 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon minced jalapeno pepper (optional)
- Salt and ground black pepper to taste
- In a medium bowl, combine pineapple, red bell pepper, red onion, cilantro, lime juice and jalapeno pepper.
- Stir until well blended. Season with salt and black pepper to taste.
- Refrigerate for at least 1 hour before serving.
