Pickled Ginger
Ingredients
  • 1/2 pound fresh ginger
  • 1/2 cup rice vinegar
  • 3 tablespoons sugar
  • 1 teaspoon salt

Steps
  1. Peel the ginger and slice into thin strips.
  2. In a small saucepan, combine the vinegar, sugar, and salt and bring to a boil.
  3. Add the ginger slices and reduce heat to low. Simmer for 10 minutes.
  4. Remove from heat and let cool before transferring to an airtight container.
  5. Store in the refrigerator for up to 2 weeks.
