- 2 lbs beets
- 1 cup white vinegar
- 1/4 cup sugar
- 2 teaspoons salt
- Wash and peel the beets.
- Chop into cubes.
- Place in a jar with a lid.
- In a saucepan, heat the vinegar, sugar, and salt. Bring to a boil and stir to dissolve.
- Pour over the beets in the jar. Cover and refrigerate for at least two hours before serving.
