Pickled Beets
Ingredients
  • 2 lbs beets
  • 1 cup white vinegar
  • 1/4 cup sugar
  • 2 teaspoons salt

Steps
  1. Wash and peel the beets.
  2. Chop into cubes.
  3. Place in a jar with a lid.
  4. In a saucepan, heat the vinegar, sugar, and salt. Bring to a boil and stir to dissolve.
  5. Pour over the beets in the jar. Cover and refrigerate for at least two hours before serving.
