- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 4 cups beef broth
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 teaspoon ground coriander
- 4 ounces dried rice noodles
- Heat a large pot over medium heat. Add the onion and cook until softened and lightly browned. Add the garlic and ginger and cook for 1 minute.
- Add the beef broth, fish sauce, sugar, and coriander. Bring to a boil then reduce heat to low.
- Add the noodles and simmer for 5 minutes or until tender.
- Serve with bean sprouts, fresh basil leaves, lime wedges and jalapeños.
