- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 3 tablespoons cold water
- 2 cups shredded sharp Cheddar cheese
- 1/4 cup chopped onion
- 1 (9 inch) unbaked pie crust
- 3 eggs, beaten
- 1 (10.75 ounce) can condensed cream of mushroom soup
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a saucepan over medium heat.
- Stir in flour and salt; cook, stirring constantly, until mixture is smooth and bubbly.
- Remove from heat; stir in cold water.
- Mix in cheese and onion; spoon into pie crust.
- In a medium bowl, beat eggs with soup; pour over cheese mixture.
- Bake at 350 degrees F (175 degrees C) for 40 minutes or until golden brown.
- Let cool before serving.
