Pesto Grilled Pita
Ingredients
  • 2 whole-wheat pitas
  • 1/4 cup basil pesto
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped sun-dried tomatoes

Steps
  1. Heat a large skillet over medium heat.
  2. Spread 1 tablespoon of pesto on one side of each pita.
  3. Place the pitas in the skillet, pesto side down.
  4. Cook for 2 minutes, or until lightly browned and toasted.
  5. Spread the remaining pesto on top of each pita and sprinkle with feta cheese and sun-dried tomatoes.
  6. Cook for an additional 2 minutes, or until the cheese is melted and the pita is crispy.
  7. Cut into wedges and serve warm.
