- 2 boneless, skinless chicken breasts
- 4 tablespoons pesto
- 4 slices of mozzarella cheese
- 4 slices of sourdough bread
- 1 tablespoon olive oil
- Heat a large skillet over medium-high heat and add the olive oil.
- Add the chicken breasts and cook for 5 minutes on each side, until golden brown and cooked through.
- Spread the pesto onto one side of each slice of bread.
- Top two of the slices with a slice of cheese and then top with the cooked chicken breasts.
- Top with remaining slices of cheese and bread to form sandwiches.
- Place sandwiches in the skillet over medium heat. Cook for 2-3 minutes on each side, until cheese is melted and bread is toasted.
