Ingredients
  • 2 boneless, skinless chicken breasts
  • 4 tablespoons pesto
  • 4 slices of mozzarella cheese
  • 4 slices of sourdough bread
  • 1 tablespoon olive oil

Steps
  1. Heat a large skillet over medium-high heat and add the olive oil.
  2. Add the chicken breasts and cook for 5 minutes on each side, until golden brown and cooked through.
  3. Spread the pesto onto one side of each slice of bread.
  4. Top two of the slices with a slice of cheese and then top with the cooked chicken breasts.
  5. Top with remaining slices of cheese and bread to form sandwiches.
  6. Place sandwiches in the skillet over medium heat. Cook for 2-3 minutes on each side, until cheese is melted and bread is toasted.
