- 1/2 cup prepared pesto
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 4 cups cooked rotini pasta, cooled
- 2 cups cooked chicken, diced or shredded
- 1 cup grape tomatoes, halved
- 1 cup cucumber, diced
- In a medium bowl, whisk together the pesto, mayonnaise, lemon juice and garlic powder.
- Season with salt and pepper to taste.
- In a large bowl, combine the pasta, chicken, tomatoes and cucumber.
- Add the dressing and toss to combine.
- Serve chilled or at room temperature.
