Pesto Chicken Pas…
Ingredients
  • 1/2 cup prepared pesto
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 4 cups cooked rotini pasta, cooled
  • 2 cups cooked chicken, diced or shredded
  • 1 cup grape tomatoes, halved
  • 1 cup cucumber, diced

Steps
  1. In a medium bowl, whisk together the pesto, mayonnaise, lemon juice and garlic powder.
  2. Season with salt and pepper to taste.
  3. In a large bowl, combine the pasta, chicken, tomatoes and cucumber.
  4. Add the dressing and toss to combine.
  5. Serve chilled or at room temperature.
  6. Enjoy!
