- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon ground cinnamon
- 3 cups old-fashioned oats
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, peanut butter, granulated sugar and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder and cinnamon. Gradually add to the creamed mixture and mix until combined.
- Stir in the oats.
- Drop dough by rounded tablespoonfuls onto prepared baking sheet. Flatten slightly with a fork.
- Bake for 8 to 10 minutes in preheated oven. Cool on cookie sheet for 5 minutes before transferring to wire racks to cool completely.
