Peanut Butter Cur…
Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (optional)
  • 3 cups vegetable broth or water
  • 3 tablespoons creamy peanut butter

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute.
  2. Add the curry powder, cumin, turmeric, coriander and cayenne pepper (if using). Stir to combine and cook for 1 minute.
  3. Add the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  4. Stir in the peanut butter until fully combined. Simmer for an additional 5 minutes.
  5. Serve hot over cooked rice or noodles.
