- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 2 teaspoons ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (optional)
- 3 cups vegetable broth or water
- 3 tablespoons creamy peanut butter
- Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute.
- Add the curry powder, cumin, turmeric, coriander and cayenne pepper (if using). Stir to combine and cook for 1 minute.
- Add the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 15 minutes.
- Stir in the peanut butter until fully combined. Simmer for an additional 5 minutes.
- Serve hot over cooked rice or noodles.
