Preheat oven to 350°F. Line two baking sheets with parchment paper.
In a large bowl, cream together the butter and sugars until light and fluffy.
Add the egg and vanilla extract and mix until combined.
Add the peanut butter, baking soda, salt, and flour and mix until a dough forms.
Stir in the chocolate chips.
Using a cookie scoop or spoon, scoop out balls of dough onto the prepared baking sheets about 2 inches apart. Flatten each ball slightly with your hand.
Bake for 8-10 minutes or until golden brown around the edges.
Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
To assemble sandwiches, spread about 1 teaspoon of peanut butter between two cooled cookies. Enjoy!
