In a large bowl, mix flour, sugar, baking powder, baking soda and salt. In a separate bowl, beat together eggs, milk and melted butter. Pour wet ingredients into the dry ingredients and mix until blended.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
For waffles: Heat waffle iron according to manufacturer's directions. Pour batter onto hot waffle iron. Cook until golden brown. Serve hot.
