- 1 block of firm tofu
- 2 tablespoons of oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1/4 teaspoon of turmeric powder
- 1/2 teaspoon of garam masala powder
- 1/2 teaspoon of cumin powder
- 1/4 teaspoon of coriander powder
- 3 cups of spinach, chopped
- Heat the oil in a pan over medium heat. Add the garlic and ginger and sauté for about 1 minute. Add the spices and mix well. Add the spinach and stir to combine.
- Add the tofu cubes and mix gently. Cover with a lid and cook for about 10 minutes or until the spinach is cooked.
- Serve hot with rice or roti.
