Palak Tofu
Ingredients
  • 1 block of firm tofu
  • 2 tablespoons of oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • 1/4 teaspoon of turmeric powder
  • 1/2 teaspoon of garam masala powder
  • 1/2 teaspoon of cumin powder
  • 1/4 teaspoon of coriander powder
  • 3 cups of spinach, chopped

Steps
  1. Heat the oil in a pan over medium heat. Add the garlic and ginger and sauté for about 1 minute. Add the spices and mix well. Add the spinach and stir to combine.
  2. Add the tofu cubes and mix gently. Cover with a lid and cook for about 10 minutes or until the spinach is cooked.
  3. Serve hot with rice or roti.
