Pad Thai
Ingredients
  • 3 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • 2 tablespoons vegetable oil
  • 1/4 cup white onion, chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1 (14 ounce) package extra-firm tofu, cubed
  • 3 cups bean sprouts, divided

Steps
  1. In a small bowl, whisk together the fish sauce, tamarind paste and palm sugar until the sugar is dissolved.
  2. Heat oil in a large wok or skillet over medium-high heat. Add onion and garlic; cook and stir until fragrant, about 1 minute.
  3. Add red pepper flakes and tofu; cook and stir for 2 minutes.
  4. Stir in 2 cups of bean sprouts; cook until lightly browned and tender, about 3 minutes.
  5. Stir in remaining bean sprouts; season with fish sauce mixture. Cook until heated through.
  6. Serve hot.
