Ingredients
  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into thin, even slices.
  3. Place the sweet potato slices in a large bowl and drizzle with olive oil. Toss to coat.
  4. Arrange the sweet potato slices in a single layer on the prepared baking sheet. Sprinkle with salt and pepper.
  5. Bake for 20 minutes, flipping halfway through cooking time.
  6. Remove from oven and let cool before serving.
