- 1 lb boneless, skinless chicken breasts, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning blend
- Salt and freshly ground black pepper to taste
- 8 ounces uncooked penne pasta (or any short cut pasta)
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 5 minutes, or until lightly browned.
- Add the garlic and cook for 1 minute more.
- Stir in the chicken broth, cream, Parmesan cheese and Italian seasoning blend. Simmer for 10 minutes.
- Add the flour and stir until combined. Simmer for 5 minutes more.
- Stir in the pasta and season with salt and pepper. Simmer for 15-20 minutes, or until the pasta is cooked through.
- Stir in spinach and artichoke hearts. Simmer for 2-3 minutes more.
- Serve hot.
