- 4 boneless, skinless chicken breasts
- 1/2 cup cooked octopus, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup diced red onion
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together the octopus, feta cheese, red onion and olive oil.
- Season with salt and pepper.
- Cut a pocket into each chicken breast.
- Stuff each pocket with the octopus mixture.
- Place chicken breasts in a greased baking dish.
- Bake in preheated oven for 25 minutes or until chicken is cooked through.
- Serve hot.
