Oatmeal Pancakes
Ingredients
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 3 tablespoons butter, melted and cooled slightly
  • 1 large egg, lightly beaten

Steps
  1. In a medium bowl, whisk together oats, flour, sugar, baking powder, baking soda and salt.
  2. In another medium bowl, whisk together buttermilk, butter and egg.
  3. Add wet ingredients to dry ingredients and stir until just combined.
  4. Heat a lightly oiled griddle or nonstick skillet over medium heat.
  5. Pour batter by 1/4 cupfuls onto the griddle. Cook until bubbles form on the surface of the pancakes and the edges look cooked, about 2 minutes.
  6. Flip pancakes with a spatula and cook until golden brown on the bottom side, about 2 minutes more. Serve hot.
