- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 3 tablespoons butter, melted and cooled slightly
- 1 large egg, lightly beaten
- In a medium bowl, whisk together oats, flour, sugar, baking powder, baking soda and salt.
- In another medium bowl, whisk together buttermilk, butter and egg.
- Add wet ingredients to dry ingredients and stir until just combined.
- Heat a lightly oiled griddle or nonstick skillet over medium heat.
- Pour batter by 1/4 cupfuls onto the griddle. Cook until bubbles form on the surface of the pancakes and the edges look cooked, about 2 minutes.
- Flip pancakes with a spatula and cook until golden brown on the bottom side, about 2 minutes more. Serve hot.
