Ingredients
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/4 cup light brown sugar, packed
  • 2 cups quick oats (not instant)
  • 1/2 teaspoon ground cinnamon

Steps
  1. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Set aside.
  2. In a large microwave-safe bowl, combine the peanut butter, honey and brown sugar. Microwave for 1 minute. Remove from the microwave and stir until smooth.
  3. Add the oats and cinnamon to the mixture and stir until combined.
  4. Pour the mixture into the prepared baking pan and spread it out evenly. Use a rubber spatula or your hands to press it down firmly.
  5. Place in the refrigerator for 1 hour or until firm. Lift up on the parchment paper to remove from pan, then cut into bars.
  6. Store in an airtight container in the refrigerator for up to 2 weeks.
