Ingredients
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 6 ounces cream cheese, softened
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon coconut extract (optional)
  • 1/4 cup canned coconut milk
  • 3 tablespoons shredded sweetened coconut

Steps
  1. In a medium bowl, combine the graham cracker crumbs and melted butter.
  2. Press the mixture into the bottom of a 9-inch pie plate.
  3. In a large bowl, beat together the cream cheese, sugar, vanilla extract and coconut extract (if using) until smooth.
  4. Add in the coconut milk and beat until combined.
  5. Fold in the shredded coconut.
  6. Pour the mixture into the prepared pie plate and spread evenly.
  7. Refrigerate for at least 2 hours before serving.
