No Bake Chocolate…
Ingredients
  • 1 cup rolled oats
  • 1/2 cup nut butter of choice
  • 1/3 cup honey or maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup coconut flakes

Steps
  1. In a medium bowl, mix together the oats, nut butter, honey or maple syrup, cocoa powder, vanilla extract and salt until combined.
  2. Fold in the coconut flakes.
  3. Using a cookie scoop or spoon, scoop out round balls of the mixture and place them on a parchment paper-lined baking sheet. (You should get about 16-18 balls total.)
  4. Refrigerate for at least 30 minutes before serving.
  5. Store in an airtight container in the refrigerator for up to 1 week.
