- 2 cups rolled oats
- 1/2 cup shredded coconut
- 1/2 cup melted coconut oil
- 1/4 cup honey or maple syrup
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- Line an 8x8 inch baking pan with parchment paper.
- In a large bowl, mix together the oats and shredded coconut.
- In a small bowl, whisk together the melted coconut oil, honey or maple syrup, cocoa powder and vanilla extract.
- Pour the wet ingredients over the oat mixture and stir to combine.
- Press the mixture into the prepared baking pan. Place in the refrigerator for 30 minutes to set.
- Once set, cut into bars and enjoy!
