- 2 lbs. cream cheese, at room temperature
- 1 1/2 cups sugar
- 4 large eggs, at room temperature
- 2 tsp. vanilla extract
- 1/4 cup all-purpose flour
- 1/4 cup heavy cream or sour cream
- 1/4 cup freshly squeezed lemon juice
- 1 tsp. grated lemon zest
- Preheat the oven to 350°F (175°C).
- In a large bowl, beat the cream cheese until smooth.
- Add the sugar and beat until creamy.
- Add the eggs one at a time, beating well after each addition.
- Add the vanilla extract, flour, cream or sour cream, lemon juice and zest and mix until just combined.
- Pour the mixture into a 9-inch (23 cm) springform pan lined with parchment paper.
- Bake for 45 minutes or until golden brown and set in the center.
- Cool completely before serving.
