Ingredients
  • 2 lbs. cream cheese, at room temperature
  • 1 1/2 cups sugar
  • 4 large eggs, at room temperature
  • 2 tsp. vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup heavy cream or sour cream
  • 1/4 cup freshly squeezed lemon juice
  • 1 tsp. grated lemon zest

Steps
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat the cream cheese until smooth.
  3. Add the sugar and beat until creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add the vanilla extract, flour, cream or sour cream, lemon juice and zest and mix until just combined.
  6. Pour the mixture into a 9-inch (23 cm) springform pan lined with parchment paper.
  7. Bake for 45 minutes or until golden brown and set in the center.
  8. Cool completely before serving.
