Ingredients
  • 1 lb carrots, peeled and sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place carrots in a baking dish.
  3. In a small bowl, mix together the olive oil, mustard, honey, salt and pepper.
  4. Pour the mixture over the carrots and toss to coat.
  5. Bake for 30 minutes in the preheated oven, stirring once or twice.
  6. Serve warm.
