- 1 lb carrots, peeled and sliced into 1/2-inch rounds
- 3 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- Place carrots in a baking dish.
- In a small bowl, mix together the olive oil, mustard, honey, salt and pepper.
- Pour the mixture over the carrots and toss to coat.
- Bake for 30 minutes in the preheated oven, stirring once or twice.
- Serve warm.
